I am trying to set up a process of sharing the data from Snowflake to SFTP server on a regular basis using Matillion.

Pleas read the documentation on the "S3 unload" (or similar for other cloud platforms than AWS) and "Data Transfer" components. The first one can export any Snowflake table to a file (CSV, JSON, ...) in your S3 and the latter can transfer the file to a target system like a SFTP server.
