When adding the end point listed in the instructions, I get an error that the user isn't authorised. Any ideas on how to fix this?

If you are using the Matillion Hosted agent, you have to use the Database Query component to access the database rather than the RDS Query component.
You can find all the settings and credentials on the notes from the Academy to use this component.
Then the rest of the instructions for the course will be exactly the same you will watch on the video.
